Carrageenan solution improves preservation performance and reduces cooking losses prior to consumption due to its supporting and/or interactive properties with other ingredients in this particular application.

Carrageenan solution can be used either in the injection process only, or in the tumbling/mixing process only, or in a combination of the above processes. Carrageenan can be used for:

  1. Steaks
  2. Loin cuts
  3. Poultry cuts
  4. Whole birds
  5. Fish
